• What rapadura is: Whole cane sugar: the cane juice is simply evaporated, with nothing separated out. Ordinary brown sugar is refined white sugar with molasses added back; rapadura never had it taken out.
• How it tastes: Moist and granular, with a strong caramel and molasses flavour that carries through into whatever it is used in.
• Where to use it: Gingerbread, flapjacks, marinades, coffee and anything wanting a caramel note. It is not a straight swap for white sugar in delicate baking.
