• Why powder rather than a jar: Colman's heat is volatile: it develops when the powder meets water and blows off within about fifteen minutes. Mixing it fresh is the only way to get the full heat, which is why British cooks keep the tin.
• How to mix it: Equal parts powder and cold water, stirred and left to stand for ten minutes. Cold water, not hot - hot water kills the heat.
• Beyond the plate: The powder is also a working ingredient: in cheese sauce, Welsh rarebit, dressings, cauliflower cheese and rubs, where it adds heat without liquid.
